Hazelnut Crusted Salmon

INGREDIENTS
1 ½ - 2 lbs salmon , sliced into 4 pieces 2 tablespoons fresh lemon juice 1 tablespoon honey 1 tablespoon mustard ½ cup hazelnuts 2 tablespoons hazelnut flour 1 teaspoon salt ¼ teaspoon pepper 2-3 tablespoons hazelnut oil 2 tablespoons fresh parsley (optional) INSTRUCTIONS
PREP. Preheat oven to 375° F. Line a baking sheet with parchment paper and place the pieces of salmon evenly on top.
DRESS. Whisk together the lemon juice, honey, and mustard. Drizzle mixture over the salmon. CRUST. In a food processor, pulse the hazelnuts, flour, salt, pepper, parsley if using, and hazelnut oil until hazelnuts are coarsely ground and all ingredients are combined. Alternately, finely chop the hazelnuts and combine ingredients with a fork. Pat the hazelnut mixture onto the salmon pieces until they are well covered. BAKE. Bake for 15 minutes on 375°, then broil for an additional 2 minutes on 500°. Hazelnuts should be golden brown and the salmon should be fully cooked (should flake easily along the white lines). Serve immediately. ENJOY! |
